I always struggle to think of something to cook for dinner and as such I often fall into a rut of a slab of fish and a pile of greens every evening. I like to eat quite lightly at night and it can be difficult to find decent dinner recipes that aren’t stodgey. I stumbled across this recipe over the weekend and decided to mix it up a little. Mr Smaggle LOVED this and very kindly invited me to make it any time I like. How very thoughtful of him.

It’s the perfect light and fresh dinner that’s dead easy to make. Perfect for a weeknight when you’re really busy but trying to be healthy.

Looks yum, but I might save this one til summer :-). This week we’ve had dal makhani (indian lentil curry), homemade veggie burgers and lazy night pasta. Later in the week we’re having homemade pizzas, thai green curry and vegetable tart.

My favorite go to, easy, healthy dinner is a simple teriyaki chicken stirfy with brown rice. My partner loves it and it’s a great way to make him eat some vegetables 😉
I just throw together some chicken breast, red capsicum, broccoli, snow peas, fresh ginger, and a few spoons of teriyaki sauce. To make things easier I always use the pre-cooked brown rice cups you can get in Woolies – quick to prepare, doesn’t make a mess and best of all is the portion control!
