How to Make Muffins Tops… Not The Kind That Hang Over Your Pants.

I recently went to a meeting and there was a strange-looking snack on the table. It looked like a squashed muffin biscuit. I was intrigued. Turns out they were raspberry lemon sugar glazed muffin tops and one of the ladies in the office has special pans to make them. They were AWESOME so naturally the second I got home I hit up ebay to find some of these magical pans. 

I bought mine from this ebay seller but I’m sure there’s some specialty cookware stores that stock them.

They arrived in the mail over a fortnight ago but I only had the chance to use them this weekend. I made Orange Coconut Choc Chip muffin tops and honestly, I may never make regular muffins again. They’re like a regular muffin but without the commitment. The perfect treat for a loose cannon kind of snacker. 

Orange Coconut Choc Chip Muffins

What You Need

2.5 cups of sifted self-raising flour (I used gluten-free flour but feel free to use regular flour)

3/4 cup of sugar

2 eggs

1.5 cups of milk

1 cup of dark chocolate chips

1 cup of shredded coconut

1 teaspoon of orange essence

What You Do

1. Mix dry ingredients.

2. Add wet ingredients.

 

Easy as pie!

Making these reminded me of my two favourite muffin top television references.

So if you could make  these and sing ‘My muffin top is all that, whole grain low-fat. I know you want a piece of that, but I’m just here to dance!‘… that would make me sublimely happy.

Confession? Mr Smaggle and I had these for dinner last night. With popcorn. Because we’re gross adults, that’s why. Highly recommended.
