Gluten Free Lemon and Poppy Seed Loaf Recipe

- 2 cups of gluten free self raising flour
- ½ cup of caster sugar
- 1 tablespoon baking powder
- The rind of 1 lemon
- Pinch of salt
- 2 tablespoons of poppy seeds
- 175gms of unsalted butter, melted
- 1 cup of butter milk
- 2 eggs
- 1 teaspoon of vanilla bean paste
- Pre-heat oven to 180 degrees celicus. Grease a loaf tin with butter and line with baking paper.
- Place all dry ingredients - flour, baking powder, sugar, salt and poppy seeds in a large bowl and combine with a wooden spoon.
- Whisk together all wet ingredients - milk, eggs, vanilla, lemon zest and butter - in a jug.
- Pour wet ingredients over dry ingredients and combine gently. Be super careful not to over stir it.
- Spoon batter into prepared cake tin and place in the oven.
- Bake for about 45 to 50 mins and rotate the cake halfway through to keep the cook even.
- Serve warm with an unholy amount of butter.
