Gluten Free Lemon and Poppy Seed Loaf Recipe

What You Need
  • 2 cups of gluten free self raising flour
  • ½ cup of caster sugar
  • 1 tablespoon baking powder
  • The rind of 1 lemon
  • Pinch of salt
  • 2 tablespoons of poppy seeds
  • 175gms of unsalted butter, melted
  • 1 cup of butter milk
  • 2 eggs
  • 1 teaspoon of vanilla bean paste
What You Do
  1. Pre-heat oven to 180 degrees celicus. Grease a loaf tin with butter and line with baking paper.
  2. Place all dry ingredients - flour, baking powder, sugar, salt and poppy seeds in a large bowl and combine with a wooden spoon.
  3. Whisk together all wet ingredients - milk, eggs, vanilla, lemon zest and butter - in a jug.
  4. Pour wet ingredients over dry ingredients and combine gently. Be super careful not to over stir it.
  5. Spoon batter into prepared cake tin and place in the oven.
  6. Bake for about 45 to 50 mins and rotate the cake halfway through to keep the cook even.
  7. Serve warm with an unholy amount of butter.
