5 Weekday Breakfasts To Go (…and under 300 Calories each!)

This post is sponsored by Woolworths

I

’m a big advocate of breakfast eating but whenever I discuss this with friends I’m in the minority. Lots of people don’t like to eat breakfast or simply don’t have the time to prepare it or eat it in the mornings. After watching a friend spend $6 on two slices of dry multigrain toast at a very basic cafe near her work, I decided to pop together a few breakfasts to go for those busy little bees who need to eat on the run. All of these breakfasts are easy to prepare, transportable and under 300 calories. Most of these meals take just a few minutes of preparation the night before and it’s so worth it to invest that time so you have something decent in your stomach when you start the work day… and also so you don’t have to mortgage your house after spending a fortune on unappetising cafe toast with a 1000% mark up.

3. PB Banana Coconut Muffins and Yogurt

1/2 cup of coconut flour

2.5 tablespoons of raw sugar

1 cup of macro peanut butter

3 eggs

¾ teaspoon of baking soda

2 to 3 large mashed bananas

1/3 cup of almond milk

1/2 teaspoon of vanilla bean paste

In a large mixing bowl combine coconut flour, sugar, and baking soda.

After mixing the dry ingredients together add in the mashed banana, almond milk, vanilla extract, and peanut butter. Completely combine all ingredients.

Half fill 12 muffins tins with mixture. Bake the muffins at 175 degrees for 20 minutes. Bake until muffin tops are golden or a cake tester comes out cleanly.

CALORIES

Pre-make these muffins and store them in an air tight container and then simply grab one on the way out the door and devour with a pot of natural unsweetened yogurt.

I always try to make the time to eat a proper breakfast either at home or at work but for those occasional days when I have a 7.30am meeting or I have a morning gym session, these transportation friendly breakfasts-to-go are total life savers.

If I’m super desperate, even just a banana first thing in the morning or a small handful of trail mix is so much better than starting my day without any fuel in my tank.

Also poppets, this is also the finale to my Woolworths macro and gluten-free series and to celebrate I’m giving away a $100 Woolworths voucher to one lucky reader in Australia.
